PSA: Chickpeas Act As Diet Exchange For Salt n’ Vinegar Chips. And They’re Good.

I was drooling for some salt n’ vinegar chips the other day. And because deep-fried potatoes with massive amounts of salt and saturated fats don’t appear to fit into my newly redefined healthy eating standards, I thought I’d look for an alternative.  A healthy alternative. So I decided to  google healthy exchanges for salt n’ vinegar chips.

Thank God for Google, seriously.

This is where I found ohsheglows.com and immediately added it to my favorite bookmarks.

 Angela Liddon is the genius behind this recipe as well as everything you can find on ohsheglows.com.   Click to it and check it out.  The website is full of amazing ideas for food–especially yummy desserts– and they are made with healthy, vegan-friendly ingredients. PLUS there are tons of other pieces of fun information about the web hostess herself, including her healthy-lifestyle story which is one I certainly connected with.

Vegiversary!

Yesterday I was making the two hour drive home from my Shakespeare class when I passed a truck that was carrying cattle.

And because I am somewhat of a creep/animal lover/insane driver, I slowed down to try and see if there were any cows in the truck or if they’d already been dropped off at their destination. The lil’ cows were in there. I made eye contact with one, which then lead me to cry… Clearly I am normal (cough, cough).
Now obviously, this is not a picture I took (Thanks Google Images!) but it is pretty close to what I saw. I started wondering where those lil’ guys were heading and if they liked riding in that truck like my dog does…
(Isn’t Sidney so cute?)…Or if the cows were sad and wanted to go back home. I wondered if they were going to a big open pasture or if they were going to become dinner for some family this week.

Then I got to thinking about my decision to become vegetarian and I realized that it was probably my 4 month vegiversary…

Becoming vegetarian was not difficult. I read the book Skinny Bitch

… and never looked back. I do live in a small town that often doesn’t provide vegetarian options, so I’ve become creative when it comes to substituting for meat. Farmer’s markets this summer have become a staple in my main course meals.

Now, I am not asking everyone to become a vegetarian. Vegetarianism is not for everyone. It is my choice, it’s my decision for my body. And if you are like my brothers and my father, you probably think I am cray-cray (crazy) with a side of lettuce. But that’s fine. I can handle it. I am completely at peace with my choice to rid my diet of animals and that was only solidified when I passed those poor cows on the high way en route to who knows where.

So here’s a toast to my 4 month vegiversary! Go eat an apple or something, people!
